Flore, led by chef Bas van Kranen, practises conscious gastronomy with local vegetables, herbs and sustainably caught fish, balancing ambitious, innovative cooking with care for guests, nature and producers. It holds two Michelin stars and a Green Star. The dining room has eleven tables for 30 guests with views over the heart of the city, and a kitchen table seats one or two.
Sommelier Antonello Nicastri and his team host wine tastings in the cellar, and there are occasional four-hands dinners with guest chefs.
