De Waaghals in De Pijp has been cooking with vegetables since 1981; Eva and Martijn have continued the tradition since 2017, with chef Henrique in the kitchen. Fresh, local and sustainable ingredients star in refined dishes that blend classic techniques with modern influences.
The fully plant-based surprise menu has three or four courses (five or six for groups), with the carefully selected cheese board as the only exception, and organic, biodynamic and natural wines.
