Tewatashi (“handing over something precious”) serves Edo-mae sushi, the traditional Tokyo style, piece by piece straight from the chef to you. Omakase menus range from an introduction with small dishes and seven pieces of sushi to extended menus with chawanmushi, sashimi, wagyu, aburi nigiri, caviar and black cod. There is also an izakaya-style setting with small sharing dishes, obanzai and sake.
The interior features wood and ceramics by craftspeople from Kanazawa, the founders’ home town; the handmade tableware is for sale.
